Soup is on!

Believe it or not, I had made soup once before we moved to Ecuador. I was in my young 20s and living in New Hampshire. I decided to make some corn chowder. It was delicious but I never made it again (blame it on a bad marriage and too many moves).

The next time I made soup was when we lived in Ecuador. Yes, I was in my 60s and other than the one time when I was younger, I had never made soup from scratch. I’m not sure why I tried it there and I definitely don’t know why I didn’t use a recipe. But I made chicken soup both with stock and with a tomato base. It always turned out good.

We moved back to the states and until we bought our house in 2017, I didn’t make any more soups. Then we started buying whole roasted chickens and soup was back on the menu. Chicken vegetable but without the pasta, beans, etc that I added previously. Going low carb, soups made it easy to get our protein and vegetables.

But my favorite soup is a smoked sausage soup. I have adapted the recipe for us – I add a lot of vegetables, no potatoes, and use some tomato sauce in addition to the petite diced Italian tomatoes. I used frozen sliced carrots and zucchini blend to save time and effort. It still takes about an hour to prep.

This is what’s on the stove right now….and boy, does it smell good!

 

It’s a big pot full of sausage vegetable soup, simmering, and ready to eat in about two more hours. I did have a little oops this time…. I thought I was dumping in the Italian seasoning, and it was the pepper. Oops! We’ll see how spicy it is later….LOL!
